Ive been looking for a good apple cake recipe for some time, and this one has been handed along from person to person, and highly recommended.I havent tried it yet, will do so soon though.
Spicey Fresh Apple Cake (20cm sq or round tin)
200gr butter, softened 1 cup sugar 3 eggs 150gr yoghurt (plain or apple flavours) 3 cups of chopped apple, peeled and cored (these can be quite big chunks as they are nice to come across when eating the cake) Juice and grated grind of 1 lemon 2 cups flour 3 tspn baking powder 1 heaped tspn cinnamon (can add mixed spice too if wanted)
Mix butter and sugar til creamy. Add eggs and mix well Mix in yoghurt, fruit, lemon juice and rind, flour, baking powder, cinnamon (and mixed spice if using).DON'T OVERMIX, just loosely combine. Pour into well greased and baking paper lined (at least on the bottom) 20cm cake tin. Bake 180 degrees Celsius for 55-60 minutes. Cool on a wire rack. Serve dusted with icing sugar
Also works will with fresh apricots, peaches, nectarines, and plums.

That sounds like a nice recipe katienz. I am always looking for any cake recipes which contain fresh fruit. Thank you for posting it.
