We use our favourite brownie recipe and just substitute the Gluten free baking mix I buy at a local bakery (mix or rice flour etc), our gluten free friend loves it,

175 g dark choc 175g butter 250g caster sugar 3 large eggs ( important that they are large) 115 g Cornflour 100 g chocolate chips
Easy! Melt the butter and choc in a bowl in the microwave. In a different bowl beat the eggsand add to the slightly cooled choc mixture. Add the sugar. Sift the flour in and beat until smooth. Add the choc chips. Bake for 25 minutes until pale brown ( the middle will still be soft) at 170 degrees. Cool in the tin!
So easy my five year makes them! Very delicious and very heavy on waistlines! Excellent with icecream.

Add 225g gluten free flour and 250g of dark chocolate or walnuts or leave plain.
