250g butter 200g dark chocolate, chopped 2c sugar 4 eggs, lightly beaten 1 tsp vanilla essence 1c flour 1/2 tsp baking powder 1/2 c cocoa icing sugar, to dust, optional
Preheat oven to 180°C.Grease a 25 x 20 cm baking tin and line base with baking paper.Combine butter and chocolate in a saucepan.Stir constantly over a low heat until melted and smooth.Remove from heat and transfer mixture to a large bowl.Stir in sugar.Add eggs and essence and beat with a wooden spoon until combined.Sift flour, baking powder and cocoa.Stir into chocolate mixture.Transfer to prepared tin.Bake for about 50 minutes or until firm to touch, with cracks appearing on surface.Cool in tin and turn onto a chopping board to cut.Dust with icing sugar to serve.
