Recipe for MOIST blueberry muffins?

Bronwyn's Blueberry Muffins.
2 cups of self raising flour
1 cup of sugar
1/2 tsp salt

mix together
2 eggs
1/2 cup of milk
125 grams melted butter
mix the wet into the dry
Add 1 & 1/2 cups of frozen blueberry's

Preheat oven to 200°C
bake 115 to 20 minutes
makes 12

If you go to New World and buy something of the Pams brand, you will get a free folding bag to put your purchases in.On the bottom of the bag there is a good blueberry muffin recipe. The bag's nice too!

I use 1/2 sour cream and 1/2 milk in mine. I add a grated apple and sometimes grated orange rind as well.

BLUEBERRY MUFFINS

360 grams (12 ½ oz s) Plain four
120g (4 ½ ozs) Sugar
4 tsps Baking powder
½ tsps Salt
4 eggs
110g (4ozs) Butter (melted)
350 mLs (12 ozs)(Milk)
2 tsp Vanilla essence
2 tsp Grated lemon rind
320 g (12ozs )Fresh blueberries (I use frozen blueberries- Do not thaw)

1. Preheat a 200C (400 F) orgas 6 oven
2. Greasemuffin tin or use paper cases
3. Sift the flour, sugar, baking powderand salt into a bowl
4. In another bowl, whisk the eggs until blended. Add the melted butter, milk, vanilla and lemon rind and stir to combine
5. Make a well in the dry ingredients and pour in the egg mixture. With a large metal spoon, stir just until the flour is moistened, not until smooth.
6. Fold in blueberries
7. Spoon the batter into the cups leaving room for the muffins to rise
8. Bake until the tops spring back when touched lightly, 20-25 minutes. Let cool in the pan for 5 minutes before turning out

i think if you use frozen berries, you a more moistier muffin.

Alison Holst recommends poking the frozen blueberries into the muffins after you have out the mixture in the muffin trays.

I use the Alison Holst recipe and I just mix my frozen berries with the flour then work quick. I find it a lovely recipe, do it for catering and everyone says they are nice!!

I recommend Jo Seagar's recipe for Lemon Crust Blueberry Muffins (from her book: Jo Seagar Cooks) Her's are very moist.

I always add a punnet of yoghurt to the recipe.frozen berries: and very lightly mixed.
