How do I stop Pastry sticking

poolgirl6, Jun 11, 4:25am
I am doing a rhubarb and raspberry pie in small fluted tins (non-stick)
Do I use a spray to stop it sticking or just butter and flour!
Hard to line it with baking paper of course.

Butter and flour lightly, but make sure your oven is heated properly before you put them in. Keep pastry cases chilled until you are ready to fill them.

tin glide
melt 4ozs of fat add 1oz of vege oil, stir in 2 ozs flour. mix well. keep out of the fridge, in a cool place. You may need to melt and stir a bit to use.
You can use vegetable fat , if you wish. Just don't use all oil
Paint it on to the tins with a pastry brush.

I always spray and dust with flour even if using non stick tins

Thank you, I have since spoken to a "kitchen shop" and they say that the oil sprays actually damage the non stick surface and not to use them. And that the oil sprays are "notto be used".Interesting.
Pickles7 how long can I keep your glide!Out of the fridge concerns me. Will give that a try meantime. Thank you everyone for your help.

Pickles7Your glide recipe;can I use Coconut oil, instead of "fat!Meant to be on a low fat diet. Thanks

I use oil in a pump spray, this would not damage surfaces. They must be refering to the aerosol oils.

no, all oil has the opposite effect. use a solid vege fat. it lasts well. out of the fridge I keep mine in the pantry.
