BEST carrot cake recipe?

Carrot Cake Lovely moist.

75 grams butter,
1 1/2 cups brown sugar, make sure this is firmly pushed into cup when measuring,
1 150gram pot sour cream.
3 eggs preferably size 7,
1 cup plain white flour,
1 1/2 teaspoons baking soda,
1 teaspoon mixed spice,
1 1/2 teaspoons cinnamon,
1/4 teaspoon salt,
3/4 cup wholemeal flour,
2 cups grated carrots - once again firmly pushed into cup when measuring,
1/4 cup raisins (some say about 1/4 cup walnuts into currant size pieces too if you wish).

CREAM CHEESE ICING
1/2 cup cream cheese,
1 tablespoon butter,
1 teaspoon vanilla essence or lemon juice,
2 1/2 cups icing sugar sifted.

Soften butter, beat in sugar, add sour cream and eggs and beat thoroughly.
Sift flour, baking soda, mixed spice cinnamon and salt.
Add wholemeal flour.
Fold into sour cream mixture add grated carrots and raisins and nuts.
Put Into greased and lined all sides with baking paper - 20 cm square cake or 23cm round tin.
Bake 180c for about 1 hour, check if cooked by inserting a wooden skewer into the cake near the centre and pull out and all is crumbly sort of cook moist, not liquid sticky batter stuff.
When cold, ice with cream cheese icing.

CREAM CHEESE ICING
Beat cream cheese until soft.
Add softened butter and vanilla or lemon juice and beat well.
Gradually beat in sifted icing sugar until smooth.

1 cup of walnuts
1 c raisins
2 c sugar
2 t cinnamon
2 t vanillas ess
1 t salt
2 c grated carrot
1 cup of crushed pinapple.

Put everything in a large bowl, mix through and put in lined and greased cake tin. 180.c for 1 hour. cream cheese icing on top.

Always get asked for the reciepe.

4 EGGS 2 TSP CINAMMON
2 C SUGAR 1 TSP MIXED SPICE
1 ¼ VEG OIL 2.5 C GRATED CARROT
2 C FLOUR 432G CRUSHED PINEAPPLE
2 TSP B. SODA 1 C CHOPPED WALNUTS
2 TSP B. POWDER
PREHEAT OVEN TO 180
BEAT EGGS, SUGAR & OIL UNTIL DISSOLVED.
COMBINE FLOUR, BAKING SODA, POWDER & SPICES.
STIR INTO SUGAR MIXTURE.
STIR IN CARROT, PINEAPPLE & WALNUTS.

POUR INTO 20CM TIN
BAKE FOR 1 ¼ HOURS OR UNTIL COOKED.
LEAVE IN TIN FOR 15 MINS BEFORE TURNING OUT.
DECORATE CAKE WITH CREAM CHEESE ICING AND CHOPPED APRICOTS AND PUMPKIN SEEDS

This Carrot Cake has had many positive reviews from posters in here. I have made it myself and passed the recipe onto someone who cooks for a living and she has endorsed it to my sister. You can thank haircutter for tracking down the recipe.

MOTUEKA GRAIN & GRAPE CARROT CAKE (CAFE now called The Mooring)
2 Cups of wholemeal Flour
2 Cups of sugar
2 tspn of Mixed spice
2 tspn Cinnamon
2 tspn of Baking Soda
1 Cup of Walnuts
1/2 Cup of Pumpkin seeds
1 Cup of Sultanas
1 Cup of chopped up dried Apricots

Mix all of the above ingredients together then:

. 750gm Grated Carrots
1½ Cups oil
4 eggs
2 tspn Vanilla

add grated carrots, mix well
whisk up 1½ Cups oils with the 4 eggs add the vanilla, then Fold Carefully into the dry ingredients
DO NOT OVER MIX Bake at 170oc for up to 2 hours keep an eye on it, Dont forget to line the tin, makes 1 large cake

Super Duper Easy Peesy No Mess No Fuss Carrot Cake
2c flour (1 plain & 1 wholemeal), 2c sugar (1 white & 1 raw), 2 tsp cinnamon, 2tsp b/soda, 4 beaten eggs, 1c oil, 3c grated carrots. Mix dry ingredients add oil then eggs & carrots, Bake at 170-180’ for approx an hour or until cooked

I use an Alison Holst recipe, it's a microwave baked cake and is really nice, and only takes 8 minutes to bake. If you want the recipe, let me know and I will post it for you.

The best carrot cakes I've ever tasted always have crushed pineapple in them.I do have a recipe somewhere which includes this, so I will try and find it.The best carrot cakes IMHO are MOIST with a hint of crunchiness (i.e seeds or nuts).

Here are a couple of recipes.both of them yummo!

CARROT CAKE

1 Cup Wholemeal Flour
1 teaspoon Baking Powder
½ teaspoon Baking Soda
½ teaspoon Salt
1 teaspoon of Cinnamon
1 teaspoon Mixed Spice
1 teaspoon Ground Cloves
1 teaspoon Nutmeg
2 tablespoons Diced Dried Apricot
1 tablespoon Pumpkin Seeds
¾ cup of Brown Sugar
2 eggs
1/3 cup oil ( I used olive)
½ teaspoon Vanilla essence
1 cup Grated Carrot
120grms Crushed Pineapple (Drained)

Pre heat oven to 175 degrees C
Mix all together and cook in 8” round tin for 35 minutes at 175 degrees C

When cold ice with cream cheese icing

2 cups Icing Sugar
1 Tablespoon of Lemon Juice
1 Tablespoon of melted butter
125 grms Cream Cheese (Traditional) don’t use spreadable as the icing will not set.

Mix together and decorate with finely chopped Dried Apricot and Pumpkin Seeds.

Motueka Grain & Grape Carrot Cake

(CAFE now called The Mooring)

2 Cups of wholemeal Flour
2 Cups of sugar
2 tspn of Mixed spice
2 tspn Cinnamon
2 tspn of Baking Soda
2 Cups of sugar
1 Cup of Walnuts
1/2 Cup of Pumpkin seeds
1 Cup of Sultanas

1 & 1/2 Cups oil

2 tspn Vanilla
Mix all the ingredients together except the ones above, (carrots oil eggs vanilla) add grated carrots, mix well whisk up 1 1/2 Cups oils with the 4 eggs add the vanilla, then Fold Carefully into the dry ingredients DO NOT OVER MIX
Bake at 170oc for up to 2 hours keep an eye on it,
Dont forget to line the tin, makes 1 large cake

Icing
1/2 block philadelphia cream cheese, not lowfat, not easy spread, chopped. 50g butter, melted. Mash together till blended (will be a bit lumpy). Add icing sugar to taste, and beat until icing is fluffy (I don't measure, but the texture will be good, and it won't be overly sweet. Then add juice of one very fresh lemon and 1/2 tsp vanilla. Hmmmm. could actually be the same as the Edmonds one. *blush*

I love this recipe and so does everyone I bake it for.
I've even had non-carrot cake eaters try it and love it lol.
CARROT CAKE
Chop medium 3 Carrots in processor til finely chopped.
Add 2C Sugar, 1C Oil, 2t Cinnamon, 4 Eggs. Whiz til blended well.
Then add 2C Self Raising Flour, 1t Baking Soda, 1t Salt.
Whiz togther til really well mixed.
Pour into 26cm cake tin.
Bake 150 degrees celcius for 1hour 20 minutes.
When cold ice with cream cheese icing.
CREAM CHEESE ICING
100g Cream Cheese. 50g Butter. 1t Vanilla Essence. Lemon or Orange juice and rind. 2C Icicng Sugar.
Soften Butter and Cream Cheese. Then add all the other ingredients. Mix til smooth and ice cake.

Carrot cake from Trademe.sorry, don't know who put it up but this is the one I do and I microwave it as directed below.
I really recommend this. So easy. Ends up like a GATEAU.
In WIZZ,chop 3 medium peeled carrots until finely chopped.
ADD:2 cups sugar,1 cup oil,2 teaspoons cinnamon,4 eggs. Whizz again till blended. Then add:2 cups plain flour,2 teaspoons baking powder,1 teaspoon baking soda,1 teaspoon salt.(can add any extra spices to taste eg nutmeg or mixed spice) Whiz all together till blended. Pour into 26cm large cake tin (lined)& bake @ 150 degrees c for approx 1 hour.
When cold ,Ice with Cream Cheese Icing-100grms Cream Cheese,50 grms butter,1 teaspoon Vanilla,2 cups Icing Sugar,Lemon or orange juice & rind.
Soften butter & cream cheese, then add other things -mix till smooth and ice cake. IMPRESS YOUR GUESTS.
You can make the same recipe and replace carrots with feijoas to make feijoa cake and made a banana cake the other day with this recipe and it was gorgeous. Made another last night for son to take to shared lunch at school today with chocolate icing. Substitutes I have used are butter(cause I used up all the oil)and brown sugar(cause I don't use white sugar)it still comes out gorgeous every time.
Replaced 1 carrot with 2 small apples, half the oil for orange juice and added chopped walnuts.
Or make a lemon cake.Whizz the whole lemon up in place of the carrot.
I make this recipe by whizzing everything up together and then placing the recipe into two ring tins and cook each for 6 minutes in the microwave.Very easy and fast to do.

BEAT 3 eggs, 3/4 cup oil and 1.5cups sugar, when light in colour add 1 tsp vanilla 3/4 cup orange juice and small tin of crushed pinnapple. In another bowl put 3 cups grated carrot, 2 cups wholemeal flour, 1 cup coconut 1.5 tsp mixed spice, 1 tsp cinnamon, 1.5 tsp baking soda, 2 tsp baking powder, .5 cup walnuts. Mix all together, bake 160 for approx 1 hr, keep checking after 50mins (oven dependent)

I never measure.just cut up the fruit and add till you think there's enough!But I'd say 1/2 - 1 cup would be sufficient.

Carrot Cake
1c oil (canola is best)
2c plain flour
2 tsps baking soda
3 eggs
1c chopped pecans or walnuts
1c raisins
2c caster sugar
2 tsps ground cinnamon
2 tsps vanilla extract
1 tsp salt
2c grated carrot
1c crushed pineapple well drained
Beat eggs together, sift together over dry ingredients, then add everything else. Mix together until well blended. Pour into a greased and lined cake tin.
Bake @ 180C for about 1 1/2 hours until cooked.
