I read about someone having a winning carrot cake recipe, I think in this weeks NZWW, but l forgot to buy it when l was in town and was wondering if anyone has seen the recipe? Just wondering if it is a different recipe to the ones already on here?

Found this. Seems to have a few different ingredients than my recipes.
The Motueka grape and grain carrot cake is hard to beat though!
MOTUEKA GRAIN & GRAPE CARROT CAKE (CAFE now called The Mooring) 2 Cups of wholemeal Flour 2 Cups of sugar 2 tspn of Mixed spice 2 tspn Cinnamon 2 tspn of Baking Soda 1 Cup of Walnuts 1/2 Cup of Pumpkin seeds 1 Cup of Sultanas 1 Cup of chopped up dried Apricots
add grated carrots, mix well whisk up 1½ Cups oils with the 4 eggs add the vanilla, then Fold Carefully into the dry ingredients DO NOT OVER MIX Bake at 170oc for up to 2 hours keep an eye on it, Dont forget to line the tin, makes 1 large cake

Thank you glasshalfull l have made the motueka cake many times and love it l couldn't buy that weeks magazine as it was gone from shelves when l went in Monday but l got it from this weeks email and the link is below for the recipe I may just have to try this one out soon but still love the Moon over Martinborough Dave's Carrot cake

Nici Wickes Steps Preheat oven to 180°C. Grease and line a 24cm square tin with baking paper. Beat the eggs and sugar until thick and creamy. Add the oil and beat again until well blended. Add the sifted dry ingredients – flours, spices, baking soda and baking powder – and mix thoroughly but with a light hand. Fold in the carrots, seeds and lemon juice. Pour into the prepared tin. Bake for 1 hour or until a skewer inserted comes out clean. Allow to cool in the tin until warm before turning out on to a wire rack. Ice with cream cheese icing once completely cooled and shower with toasted walnuts. Cream cheese icing
Place all the ingredients in a food processor and blend until smooth. Tips
- Makes one 24cm cake.
- Using some wholemeal flour and adding pumpkin and sunflower seeds adds texture to this beautiful cake.

& thanks to others who posted their recipes as well. I have made and like the Motueka recipe, but the one flower-child01 & the Nici Wickes one sound delish, as well. Which one will you try, buzzy? (for a special occasion, of course)
