CARROT CAKE
1 cup wholemeal flour 1 tsp baking powder ½ tsp baking (bicarbonate) soda ½ tsp salt 1 & ½ tsp cinnamon 1 & ½ tsp mixed spice 1 & ½ tsp nutmeg 3/4 cup brownsugar 2 eggs 1/3 cup oil (I use light olive or canola oil) 1/2 tsp vanilla essence 1 cup grated carrot 1/3 of a tin (450g size) drained crushed pineapple
Mix all together
Cook in an 8" ring tin for 35 mins @ 175 C degrees If cooked in a regular tin it may take a wee bit longer. Check with a skewer in the centre. I line the bottom of the tin with baking paper.
Cream Cheese Icing 125g cream cheese, at room temperature ½ cup icing sugar, sifted, 50g melted butter Finely grated zest of 1 lemon 1 tbsp lemon juice 1. In a bowl, beat cream cheese until creamy. Add the icing sugar, melted butter and lemon zest and juice and beat until the mixture is fluffy. 2. Spread over cold carrot cake to serve.

heres a great one to make and easy peasy ... ... ... ... ... . . Mix1&1/2 cups soya oil 2 cups raw sugar
beat in 4 eggs...
Add. . 3 cups grated carrot 1 tsp cinnamon 2 level tsp B. Powder 2 cups wholemeal flour 1 tsp salt 1 cup chopped walnuts
Mix put into greased and floured tin, it makes a fairly large cake... . Bake 50 minutes at 160 C
Icing... 1 tsp vanilla ess 3/4 cup icing sugar 250grams cream cheese 1/4 cup melted butter Beat until smooth
