Yes you can.Measurements are the same,ie 1 cup castor sugar -1 cup regular sugar.

Because it's a finer crystal it will cream more easily with butter too.

I always use castor sugar for cupcakes as it seems to give a nicer texture, and yes 1 cup castor sugar equals 1 cup normal sugar

Suggest you weigh one cup of each sugar. I think that because of the smaller crystals you would use slightly less if using cup measurements as they will fit together better.not very well explained!Just a thought.

A cup of sugar = 250g regardless of whether it's white, caster or raw sugar.The only time it's different is for brown sugar or icing sugar.

I only ever use caster sugar for baking because it dissolves and incorporates far more quickly. Just use the same amount as you would for granulated sugar.
