Has anyone got a recipe for Carrot & Bran muffins, please!

Not Carrot Bran Muffins, hannahsmummy07, but you might like to have a look at (and possibly try) the following recipe for Carrot and Walnut Cupcakes, as shown on Good Morning today:-

The recipe comes with this note "If you like the flavour of hotcross buns but don't have the time to make them, try these spicy cupcakes instead. Don't save them only for Easter celebrations though - they taste good at any time.":-))

Here's a muffin recipe for you hannahsmummy07, from a National Heart Foundation of N.Z. book "Fine Food for the Heart" (published in 1987) - note that it has a carrot variation to the basic recipe and it comes with this note:
"A nutritious alternative to traditional cakes and biscuits. This recipe is very low in fat & offers a variety of flavours and textures. Enjoy them when fresh without being smothered with spreads."

1 cup wholemeal flour
2 cups bran
1 tsp baking powder
1½ tsp mixed spice
1 cup grated apple-skins on
½ cup non-fat milk
1 cup water
3 tbsp golden syrup
1 tsp baking soda

Mix together the wholemeal flour, bran, baking powder, mixed spice and grated apple.
Gently heat the milk, water and golden syrup. Stir in the baking soda. Pour the liquid ingredients into the dry ingredients and mix until just combined. Turn into lightly greased muffin tins.
Bake at 200°C for 15-20 minutes or until golden brown.
Makes 1 dozen.
VARIATIONS: In place of the apple & mixed spice try the following combinations:-
Blueberry: 1 cup blueberries, 1 tsp cinnamon.
Carrot: 1 cup grated carrot, 1/2 cup toasted pumpkin seeds, 1/2 tsp ground nutmeg.
Citrus: 1 cup sultanas, 1 tsp grated orange rind.
To cook in microwave: Cook the milk, water and golden syrup on 100% power for 1 minute. Continue as above. Spoon the muffin mixture into a microwave-proof muffin tray, lined with paper cases. Elevate and cook 5 muffins on 100% power for 2½-3 minutes or 6 muffins for 3½-4 minutes. Stand 4 minutes.
