I have trouble getting my muffins right, can someone please their 'never fail' banana muffin recipies, thanks

Alison Holst Recipe 2 Cups Self Raising Flour, 1/2 tsp salt, 1/2 cup caster sugar, 1/2 cup chocolate bits, 100g butter, melted, 1 Cup Milk, 1 Egg, 1 Cup Mashed Banana's (2-3).
Mix flour, salt, castor sugar & chocolate bits in a bowl. In a separate bowl melt butter then add milk, and egg and beat to combine the 3. Mash & measure the bananas and add to liquid ingredients. Tip Liquid mixture into the dry ingredients. Fold carefully.. Bake at 220oC for 12-15 mins. Cool for 2-3 mins before removing from pans
a few tips to avoid the bear-missile situation. First, and perhaps most importantly, work quickly. Fold the ingredients in with a spatula until only just combined. This will ensure the finished result is light, not rubbery.use yoghurt or buttermilk to moisten, because it gives a good flavour and pleasing texture. If you don't have buttermilk, just add a good squeeze of lemon juice to whole milk and leave it for 10 minutes or so before adding to the mix.
