Holding a Knife.

Did anyone see on masterchef masterclass last night, one of the judges telling a contestant to hold the knife with her hand all the way around the blade rather than with the index finger over the top of the blade! Was an 'aha' moment for me.I've wondered why I've never been able to master the roll and slice method that makes for fast slicing even with my wonderful global knife - maybe this is why.Gonna retrain myself now!

Yes, absolutely correct. Also keep your knives sharp, there is nothing more dangerous than a blunt knife as you use alot more pressure to try and make it do it's job, running the risk of slipping and cutting yourself.

I know how much more pleasant it is to use a sharp knife.

Yes and it makes the job so much easier.

At my wedding my son tested the knife I had prepared to cut the cake. he just ran his thumb across the blade to test it, big mistake he ended up with stitches he should have known better.

If its not sharp its not a knife IMO.
