Tuna patties (fish cakes)??

Does anyone have a nice recipe for them?

not my recipe but here are a couple. Mashed potato - 1 - 2 per family member
Spring onion/chives
smoked fish - drained
(can put red capsicum and chilli sauce in - but depends on family tastes - I always put a wee bit of chilli in mine).
(can add half a packet of seafood soup sachet if wanted too)
Egg
Flour
Breadcrumbs
oil

Mixed cooled potato, spring onion, fish and capsicum/chilli (if using) together and roll into mandarin sized balls.

Slightly flatten, dip in flour, then egg, then breadcrumbs.

Fry in a small amount of oil.

Yummy!

My one uses tuna, but sure you can use smoked fish instead.

Fish Cakes
Serves 4

425g tin of tuna 1 lge kumara, mashed with a little milk
1 tbsp sweet chili sauce 1 onion finely chopped
Breadcrumbs (enough to be able to shape the fish into cakes)

Put kumara in a pot of boiling water and cook until tender. Mash with a little milk. Drain tuna well and add to mashed kumara. Add in the chopped onion and sweet chili sauce. Mix together well. Add enough breadcrumbs so you can make patties. Season with salt and pepper. Mould the mixture into patties. Heat around 2 teaspoons of oil in frying pan and cook the fish cakes for 5 -7 minutes, turning only once, until hot and golden. Serve with steamed veges or salad.

Just a tip, if you want the cakes to stay a good shape and not turn to mush when cooking, refridgerate the mashed potato overnight or for a few hours = makes a huge difference.
