Diabetic - what for pudding?

Having family which are Diabetic over for dinner on Tuesday night. I am wondering what pudding we could dish up that would be okay as we dont want to not include her!

hubby made some stuff puff pastry the other night.
filled puff pastry with low sugar jam. and sprinkle with cinnamon. was delish and barely touched my bsls

Pastry has carbohydrate, still affects the sugar levels.
Why have dessert at all! Husband is a type 1 and we never have dessert. No idea really where this idea you have to have some sugar filled sweet thing at the end of your meal came from anyway, sugar manufacturers!

Cheese, a few grapes and some whole wheat crackers for those that can eat them.

You really need to ask them what they cannot eat. For instance. Are they type 1 or type 2 diabetics. Some Type 2 diabetics are well educated and understand that they need to go very, very easy on foods that spike their blood sugars and that includes starchy vegetables, all cereals, fruit and anything with sugar in it. Artificial powdered sweeteners also have an effect on blood sugar levels because they are bulked out with other sugars.

Type 1 diabetics should basically follow a strict dietary regime as well.

However, your pals may be keen followers of the Diabetic Foundation guidelines, in which case their diets will be much freer with liberal use of high doses of medication to control their blood sugar levels.

So do check and don't guess.
