KC: Spicy Fennel and Capsicum Steamed Snapper

Hello!
Another mouth watering dish, brought to you by the Kiwi Cook.
Today were cooking fresh Snapper caught from the sea, and we have two of them so its only right to do a double recipe right!

Ingredients:
Whole snapper, gutted
80g pine nuts
1 cup quinoa
1 whole lemon
3 capsicums
50g capers
1 bulb of fennel
1 bunch of coriander
2 whole chillies
1 Tbsp paprika
1 cup water

Preheat oven to 180°C. Pre-cook quinoa in boiling water. Make a stuffing of quinoa, pine nuts, capers, coriander, chillies, paprika, and zest of the lemon. Wrap snapper in foil and stuff. Slice lemon, fennel and capsicums and place on top of the snapper inside the foil. Pour water into the foil and seal. Cook for 1 hour. Serve with a light salad.
