Low Carb Pancakes / Piklets

Does anyone one have an easy recipe to make some low carb pancakes / piklets! I'm craving some big time :D Could you make them the 'normal' way but substitute the flour for almond meal or would that not work! milk for cream or water! I must have some lol

I've also seen pork rinds used. Has anyone tried this! Could I buy the pork crackling that's in the little packets with a pig on the front!

I'm going to try the pork rinds and then see if I can make 'wraps' with the mixture with some tweeking

These are nice:

Coconut Pikelets (or Coconut Roti)
• 2 eggs
• 100g (1/2 cup) fresh ricotta
• 25g (1/4 cup) vanilla flavoured whey protein powder
• 40g (1/2 cup) desiccated coconut (unsweetened)
• 1/2t baking powder
• 1/8t salt

• Place a large frying pan over medium heat.
• Whisk together eggs and ricotta until smooth then add rest of ingredients, mixing only until well combined
• Add 2 tsp butter to pan
• Drop batter onto pan from the point of a tablespoon
• When they bubble on the top and the bubbles stay broken turn them and cook other side

Serve
With butter - for morning or afternoon tea

With cheese - a sharp cheese like aged cheddar or Wensleydale (make the pikelets small and thin)

With Indian curries (instead of roti or idli)


approx 0 .7g of carbohydrate each

Gluten free Pancakes

1-1/4 c. almond flour
4 medium eggs
4 Tbs. honey
2 Tbs. vanilla
1/4 tsp. salt
1/4 tsp. baking soda
1 Tbs. butter

Homemade Fruit Jam

For Pancakes:
Mix all ingredients together in a blender for a light, fluffy texture.
Pour onto a buttered pan. Cook slowly until golden brown; a bit longer than for regular flour pancakes.

Serve with warmed honey and/or Homemade Fruit Jam.
