best to serve on pancakes?

The Family Loves Pancakes we have several favourites
Lemon Juice and sugar , Canadian Maple Syrup. Maple Syrup mixed with a wee bit of Tequila or Rum for the adults only . . know you can fry bacon and have some other savoury toppingsbut we prefer sweet

we love citrus juice (either orange or lemon) with sugar. Golden syrup is great. Bacon. banana and berries with some whipped cream

I like putting plum jam & fresh whipped cream on them, then roll the pancake up & eat it rolled up. The thinner the pancake the better.

boil up a few strawberries, with a dash of water and sugar, make a syrup, then use this over pancakes. Don't mush the strawbs.

Chocolate pancakes with peach sauce

Preparation time:
15 mins

Cooking time:
20 mins

Serves:
4-6

Chocolate and peaches make a winning combination in this recipe
Ingredients

* 825g can peach slices in syrup
* 2 cups self-raising flour
* 1/2 cup chocolate-flavoured nesquik
* 1 3/4 cups reduced-fat milk
* 2 eggs
* 40g butter, melted
* Vanilla ice-cream, to serve

Method

1. To make peach sauce, drain peaches in a sieve over a bowl. Place half the peaches and half the syrup in a blender. Blend until smooth. Set aside remaining peaches. Reserve remaining syrup for another use.

2. Combine flour and milkshake powder in a bowl. Whisk in combined milk and eggs to make a smooth batter.

3. Heat a large non-stick frying pan over a medium heat. Add some of the butter. Cooking two pancakes at a time, pouring cup batter into pan. Cook until bubbles appear on surface. Turn pancakes and cook until lightly browned underneath. Transfer to a plate and cover to keep warm. Repeat to make 12 more.

4. Top warm pancakes with vanilla ice-cream and the remaining peaches. Drizzle with peach sauce.
Notes

Pancakes can be made up to two months in advance, then frozen. Line a shallow tray with baking paper. Arrange pancakes on tray and place in freezer. Once frozen, store in snap-lock bags or airtight containers in freezer. To serve, reheat in a moderate oven (180°C) for about 5 to 8 minutes.

Crepe Suzette

Ingredients
1 cup plain flour
2 eggs
280-300ml milk
20g butter,
Pinch salt
Olive oil, for cooking
Orange Sauce
2 large oranges, rind finely grated, juiced
6 tbs caster sugar
30g butter, chopped

Serves 2

Method

1. Sift flour into a bowl. Make a well in the centre and add eggs, whisk starting in the centre and drawing in the flour. Add the milk a little at a time whisking until batter is the consistency of thick cream.

2. Melt the butter until foamy and a little nutty then pour into the batter with a pinch of salt.

3. Heat (22cm base) crepe pan over medium heat, add a little oil to coat the base then ladle in crepe mixture, turning to coat the base completely. Cook 1-2 minutes until light golden and lacy. Turn over and cook for 10-15 seconds. Remove to plate and keep warm. Repeat using the remaining crepe batter.

4. To make the orange sauce, combine the orange rind and 4 tbs of the sugar in a bowl and use fingertips to rub them together. Strain the orange juice into a jug, you should have 250ml (1 cup). Sprinkle 1 tbs of the remaining sugar over the base of warm crepe pan, cook over medium heat until sugar melts and turns golden. Add half the orange sugar and stir to dissolve. Add 125ml (1/2 cup) orange juice and stir to dissolve the sugar. Add half the butter and shake the pan until combined. Add three crepes, one at a time to pan and fold into thirds, spooning over the sauce to coat the crepes. Add 3 tsp Grand Marnier and 3 tsp brandy to the pan and flambé.

5. Transfer crepes to a serving plate, pour over the sauce and repeat to make a second serve.

make a stack, pancake sprinkle with sugar, drizzle golden syrup and squeeze lemon, then put another pancake and repeat with a final layer of sugar etc on the top pancake. delicious!
