Curried eggs to go in sandwiches

Hard boiled eggs, curry, little cream, salt, pepper, and chives is nice too.

Curried Egg sandwiches

4 hard-boiled eggs
1/2 tsp curry powder
1 1/2 tbsp mayonnaise
2 to 3 tbsp chives, finely chopped

Mash the peeled eggs with a fork and add all the other ingredients. Season with salt and pepper to taste. Spread.

I love these, reminds me of my seventies childhood, along with stuffed eggs.

the best mayo to use is the one you make with condensed milk.

Great with a little of the green part of a spring onion chopped into it too.

Or even the one you make with egg yolk, oil, salt and pepper .
