I have leftover muesli, any recipe ideas?

I have left over muesli that I am wanting to use up.It has things like sunflower seeds, almonds, coconut etc through it.

Has anybody got any biscuit/slice recipes I could do to help use it up!

Muesli Fudge:
2 C muesli
1 C peanut butter
1 C fine coconut
1 C chopped dates
1 Tbspn honey
1/2 C water
1 C rolled oats
1Tbspn carob or cocoa powder
1 C sultanas or raisins
1/2 C chopped walnuts
1 Tbspn vanilla essence.

Cook dates in water until soft add peanut butter, vanilla and honey stir till all mixed add other ingredients mix well. Sprinkle a Tbspn of coconut into a sponge tin and press mixture on top, spread evenly and push well as it is quite a stiff mixture refidgerate. Cut into squares when set firm. Nice for school lunches.

You could also use it for crumble in an Apple Crumble dish.

Im the only one in the house who eat muesli as the other half hates it because it has nuts etc in it

This is a great recipe! Instead of the rolled oats use Muesli or half or each if you want

Baked Oaty Slice.

150g butter
1 tablespoon golden syrup
1/2 cup brown sugar
Melt together for 2 minutes in microwave. Stir to mix.
Add: 1.5 C flour
1 C rolled oats
1/2 C coconut
1 teaspoon baking powder
1 C sultanas

You can add choc chips, pumpkin or sunflower seeds, or instead of rolled oats add muesli, dried cranberries, apricots. just about anything you want. Mix well and press into tin. Bake at 180 for 10 minutes

found this recipe in a Robyn Martin biscuit book the other day. Haven't tried it yet though.
Muesli biscuits

125g butter, 3/4 C brown sugar, 1 egg, 1/2 t baking soda, 1 T warm water, 1t vanilla, 3/4 C wholemeal flour, 3/4 C coconut, 2 C toasted muesli.

Melt butter in saucepan large enough to mix all ingred. Remove from heat & stir in brown sugar. Add egg and beat well with wooden spoon. Dissolve B.soda in the warm water and add to saucepan with vanilla, flour, coconut and muesli. Mix until combined. Place heaped tablespoonsful of mixture on a greased oven tray. Flatten with a knife. Bake at 190 for 10 mins or until golden.
