What do you do with fresh mint!

"Storecupboard Mint sauce"
Boil equal quantities of chopped mint leaves, vinegar and sugar for 10 minutes. Pour into sterilized bottles and cap or cork. ( I use cleaned and sterilized small Steinlager bottles for all my store cupboard sauces, and cap them with new, sterilized, caps).
To use - thin down some of the sauce in a jug, with water, to taste. Use as you would use freshly made mint sauce.

easy lemonade. squeeze 2 large lemons (ours are huge) into a jug and fill with water adding a good sprig of mint.chill in fridge and enjoy.this is very refreshing and if you get the lemon right you dont need sugar.
