We have fresh snapper for tea, I just want to pan fry it but would like to have a sauce over the top (not tartare).Any ideas!

I often have sweet chill or sweet/sour. went to a resturant the other night, and the chef made a brandy,creamsweetchill sauce to put over my prawns. it was outta this world. so tasty.wouldnt know how to make it tho.

add to a nice mayo, chopped up capers and loads of fresh chopped up parsley and a squeeze of lemon juice. Yum yum pigs bum!

I make a thin cheese sauce and add a few drops of tomato sauce which turns it a lovely colour.Sounds weird but we love it with fish.

FISH WITH SMOKED SALMON AND CHEESE SAUCE. THIS HAS CAPERS IN IT, PHILADELPHIA CREAM CHEESE AND GARLIC SO YUM.

I love a simple Herb/Butter 'sauce' - Simply melt butter, stir through freshly chopped herbs, dill/parsley for example, add a pinch of Salt/pepper - (or add a dash of lemon juice/white wine for a slightly different taste) and drizzle over fish :-)

I usually have some incarnation of sauce beurre blanc with fish, my favourite is chilli and lime beurre blanc. Its a warm butter sauce, with cream in it.
