"Chocolate Orange Freezer Biscuits
WithLaura Faire
A great biscuit dough for freezing. Roll into two log shapes and wrap in baking paper, then foil.Remove from freezer and slice off biscuits, bake as needed.

Makes 30 biscuits
Preparation time: 10 minutes
Cooking time 12 minutes

Ingredients
250 grams butter, softened
3/4 cup caster sugar
1 navel orange, rind only
1 egg
1 teaspoon vanilla extract
2 1/2cups plain flour, sifted
1/2 cup roughly chopped chocolate

Method
Preheat the oven to 170C.
Beat together the butter, sugar and orange rind.
Beat in the egg and vanilla. Use a wooden spoon to mix in the flour and chocolate chunks with a pinch of salt if wished.
Clean hands are good for ensuring the flour at the bottom of the bowl is incorporated in the dough.
Shape into two logs and chill. (Now is a good time to freeze one log if you would like some handy for another time)
Slice into rounds and place on a lined baking tray.
Bake for 12 minutes from fresh or 17 minutes from frozen (until just beginning to colour but still pale).
