Do you have to use cornflour

eternity04, Sep 3, 8:17pm
I want to make a sponge with my girls for there Dad for Fathers Day. I have just found out that I dont have any cornflour or caster sugar. Does this matter! I have looked at other recipes on here and they all have cornflour in them. If I cant make a sponge, does any one have a recipe for a cake just as nice as a sponge.

TIA.Jan

depending on time factor and shops, the edmonds packet buttercake packet mix, makes a lovely spongy type cake.check in the edmonds book if you have one, there are a few good quick and easy ones.

Blitz your normal sugar in a food processor for Castor Sugar. I've never used cornflour in Sponge Drops, although Nigella does. Normal flour will be fine :-)

Use custard powder instead of cornflour and normal sugar instead of caster sugar.I'm presuming there is also normal flour in it as well.Wouldn't want to make a whole cake out of custard powder.
