Favourite recipes using "Smoked Chicken please.

This was in New Idea a couple of weeks ago, and is really nice.
Smoked Chicken and Roast Vegetable Salad Serves 4

1cup risoni; 700gm pumpkin; 2 cloves garlic, crushed; 1/4 cup olive oil; salt and pepper to taste;200gm button mushrooms, quartered;
1 courgette thinly sliced; 1 red capsicum; 450 gms smoked chicken thinly sliced; 120gm rocket leaves; 2 Tblsp red wine vinegar, Toasted Turkish bread to serve.
1: Cook risoni in a large saucepan of boiling water until tender. Drain. Rinse under cold water. Drain well.
2: Peel pumpkin and cut into 2 cm pieces. Toss with garlic and half the olive oil in a roasting pan. Season with salt and pepper.
3: Cook in a hot oven (200*C) for about 10 minutes. Remove from oven. Add mushrooms, courgette and capsicum. Toss to coat. Return to oven. Cook for a further 15 minutes, or until vegetables are tender.
4: Combine pasta, vegetables, chicken, rocket, vinegar and remaining oil in a large bowl. Season with salt and pepper.
5: Serve salad with lightly toasted Turkish bread.
