I have 36 mini pastry cases to fill, anyone have a favourite recipe I can use to fill them with. I have done them in the past and cant remember what I did. I think it was just a bechamel sauce and then add flavouring? TIA

Do you want sweet or savoury?

You could mix some cream style, or whole kernel, sweetcorn into the sauce, season to taste. . or add some smoked fish to the sauce. .

bechamel sauce? Or did you mean pastry cream and grand marnier was added?

no its savoury for pass around nibbles, I think I used to add asparagus (tinned) or cooked mushrooms. Its been so long since I have done them and I used to make the pastry cases but this time I have bought them, but thought someone may have another nice idea. Bechamel is like a white sauce but I add white wine-not sure if I'm supposed to but its nice!

You could do a quiche recipe and divide it amongst the cases and add different toppings such as asparagus, tomaot, mushroom etc.

Mushroom sauce with bacon is nice too.
