Gooey Sticky Lemon Slice

Pastry
2 cups flour, 1/2 cup icing sugar, 150gm cold butter

Topping
1 1/2 cups caster sugar, 3 eggs, grated rind 2 lemons, 1/4 cup lemon juice, 1/4 cup s/r flour
To make pastry, place all pastry ingredients into a food processor and run machine till mixture comes together and forms a ball.Press the pastry into a paper lined sponge roll tin or 23cm square tin and bake 160 deg C for 15 min.
In the same food processor (no need to wash) place the topping ingredients and process untill well combined.While base is still hot pour the topping over.Return to the oven and bake a further 15 - 20 min until topping is set.To serve cut into squares and dust with icing sugar.I serve with a dollop of whipped cream and lemon curd mixed together.Or yoghurt.

jed you are a gem! Have been looking for that recipe! I knew there was a lemon curd slice recipe around that is made in the processor. (I use mine so much, it's so easier for these old crook hands). I am so looking forward to making this! Tomorrow everything else will go on hold, I will be making this!!

BREAKFAST MUFFINS

Ingredients
1 1/4 cups (275g) caster sugar
2 cups (300g) plain flour
2 tsp ground cinnamon
2 tsp baking powder
1 cup sultanas
1 cup desiccated coconut

2 cups grated carrot
1 cup grated apple

1 cup chopped walnuts

3 eggs

1 cup (250ml) vegetable oil
1 tsp vanilla extract

Icing sugar, to dust nuts or sunflower seeds optional

Method
1. Preheat oven to 180degC.

2. Sift sugar, flour, cinnamon and powder into a large bowl.

Add sultanas, carrot, apple, coconut and walnuts.

In a separate bowl, beat together the eggs, oil and vanilla.

3. Add to the dry ingredients and fold until just combined - do not over mix.

4. Spoon into muffin pans and bake for(add chopped nuts or sunflower seeds ontop before baking)

25 minutes or until golden brown.
Serve dusted with icing sugar.
