Any yummy recipes for lambs brains

We have a bag of it and we want to know the best way to cook it

gently cook the brains in some salted water bring to boil and then turn off.Once cooled you roll in flour ,beaten eggs and breadcrumbs and gently pan fry in some butter and oil.........yummy..... takes me back 45 odd years to breakfasts at home when I was at high school

Another old family favourite was lightly cook then chop and add to a fritter batter, or boil and add to a white sauce. I also used to have these for before school. YUMMY

I remember Alison Holst (or maybe Simon told it on her behalf) telling a story about how she used to do lambs brains often for her kids, but to save any hassle she called them lamb puffs.Then when one of the kids went to university they asked for the recipe and was miffed to find they had been "deceived" as to what they had been eating for years!Bet it didn't stop them though.
