If I have any onion left over I dice it and freeze it. no need to buy a bag from the supermarket just pop it in a snaplock sandwich bag and flatten its so its one layer, then when frozen you can crunch it up so they are seperate pieces, would imagine thats all you would be buying for alot more from the supermarket.Same with grated cheese I just buy the cheapest Edam and grate it into a tupperware container. grated cheese when ever you need it.I hate waste and that includes money so I would never waste money on what I can easily do myself.

I've been freezing my own mashed potato for years. I used to buy a bag of mashers, cook them all up and then freeze in portions. Otherwise the potatos would be all manky before I got halfway through a bag.
These days, now I live on my own, I buy the Woolworths cracked pepper frozen mash and it's delicious! I know it's only 20 mins to cook from fresh but after a long day at work I just want convenience, and it's not at all expensive for just one person!
