cube potato, cook till just done, cool and drain.
Chop up some red onion, finely, and cooked bacon.
Throw the bacon and onion in withe the potato and use the best food mayo for a dressing, really yummy and if you want, add some pre cooked corn kernels to the dish too.

The secret to a nice potato salad is the mayo. I agree with alebix, 'Best Foods' mayo is the best. I chop spring onions into mine and it is delicious

These days it is the best thing from the supermarket, but I remember when I was young my mum used praise mayonnaise, finely chopped onion and freshly chopped mint. Simple and divine!
