anyone have a recipe for this? Not the sweetened cake type. I had some at a pot luck not so long ago and the girl who brought it has left town. She is an Islander so I guess it would be what they make there.

Was she Samoan?Was the coconut bread really dense?Is so, it might have been 'faapapa'...so bascially just flour, sugar, coconut milk, desicated coconut...mix into a dough, wrap into foil parcels and back in the oven...

Oh fantastic! The bun recipe is one I've heard about, thank you for that. And yes, the bread I tried was very dense but looked like it had a small amount of rising in it and not yeast. It had been cooked in a loaf tin.

Cook Is family make it w/ coconut milk & a little dessicated coconut.
If no coconut milk, you canjust use the dried dessicated coconut instead.A Tongan friend tried coconut essence just to make sure & it was delicious too.
