Can I freeze watercress?

I noticed bags of fresh watercress at the supermarket and am wondering if it can be frozen to be used later?
If so, is there any trick to freezing it?

Yes, although, on thawing it can be a bit mushy. You could always pop it in the pan to cook while half frozen. It wont be the same once frozen though.

You can Blanch it first before freezing, after washing it put it into hot water for about 30 seconds then into cold to cool it down to stop it from cooking, then freeze it, I do this and it is not "mushy"

I keep a bag of washed watercress in the freezer and just break some off for soup or stew. Add to boil up still frozen. I don't blanch it and it's fine.

Boil it up as per normal, drain and put in icecream containers and top up with the watercress stock leaving some room at the top for expansion when it freezes.When you want to use it, either microwave thaw it out or plonk on top of your boiling meat at the last half hour of cooking.Good way to do it when it's cheap at the market.
