Spinach & Cheese Scrolls

Spinach & Cheese Scrolls πŸ₯¬πŸ§€ you guys are going to love my Bakers Delight inspired pull apart 😍 The yummiest high protein, low calorie snack and so easy to make!

Dough:
180g self raising flour (or plain flour + 1 tbs baking powder)
200g plain greek yoghurt
1/4 tsp garlic powder

Filling:
1 cup baby spinach, finely chopped
1/2 cup ricotta or cottage cheese (100g)
1/2 cup grated cheese (50g)
1 egg yolk, optional
Pinch each - nutmeg, salt, pepper

Method:
1. Preheat oven to 180Β°C and line a baking tray.
2. Mix the filling ingredients together in a bowl, set aside.
3. Add the dough ingredients to a bowl and mix until combined, then use your hands and knead to form a dough.
4. Transfer dough onto a floured bench, roll out into a large rectangle and spread over the filling.
5. Cut into 2-3cm wide strips, roll them up and place on the tray. Optional to spray with olive oil. Bake for 12-15 mins or until lightly golden.

I used Vetta high protein flour and Coles light mozzarella for these macros. Feel free to use any cheese you like (cheddar, feta, parmesan). If you don’t have garlic powder you can use minced garlic in the filling instead.
