Spinach & Cheese Scrolls

You guys are going to love my Bakers Delight inspired pull apart 😍 The yummiest high protein, low-calorie snack and so easy to make!

Spinach & Cheese Scrolls Ingredients

For the Dough:

▪️ 180g self-raising flour (or plain flour + 1 tbsp baking powder)
▪️ 200g plain Greek yoghurt
▪️ ¼ tsp garlic powder

For the Filling:

▪️ 1 cup baby spinach, finely chopped
▪️ ½ cup ricotta or cottage cheese (100g)
▪️ ½ cup grated cheese (50g)
▪️ 1 egg yolk, optional
▪️ Pinch each - nutmeg, salt, pepper

How to make Spinach & Cheese Scrolls

Step 1: Preheat oven to 180°C and line a baking tray.

Step 2: Mix the filling ingredients together in a bowl, set aside.

Step 3: Add the dough ingredients to a bowl and mix until combined, then use your hands and knead to form a dough.

Step 4: Transfer dough onto a floured bench, roll out into a large rectangle and spread over the filling.

Step 5: Cut into 2-3cm wide strips, roll them up and place on the tray. Optional to spray with olive oil. Bake for 12-15 minutes or until lightly golden.

Note: I used Vetta high protein flour and Coles light mozzarella for these macros. Feel free to use any cheese you like (cheddar, feta, parmesan). If you don’t have garlic powder, you can use minced garlic in the filling instead.
