Spicy Salmon Wonton Cups
12 wonton wrappers
Spray oil
1 tbsp sesame seeds, toasted
1 tbsp coriander, finely chopped (optional)
-spicy salmon filling
220g sushi grade salmon, cubed
2 1/2 tbsp kewpie mayo
1 1/2 tbsp sriracha
2 tsp sesame oil
1/2 tbsp soy sauce
Juice 1 lime
1 avocado, sliced into small cubes
Preheat oven to 190C. Grease a 12-hole muffin pan with olive oil. Place wonton wrappers in the centre of each hole. Lightly spray with olive oil then bake for around 10 mins or until golden. Allow to cool. Meanwhile, place all ingredients for spicy salmon filling in a medium bowl. Mix well. Equally distribute salmon mixture across all 12 wonton cups. Top with sesame seeds and coriander, if using.
