Smoked Salmon and Pea Risotto

▪️ 1 cup Arborio rice
▪️ 4 cups chicken or vegetable broth
▪️ 1 cup fresh or frozen peas
▪️ 200g smoked salmon, flaked
▪️ 1 small onion, finely chopped
▪️ 2 tablespoons olive oil
▪️ 1/4 cup Parmesan cheese, grated
▪️ 1 lemon, zest and juice
▪️ 2 tablespoons fresh dill, chopped
▪️ Salt and pepper to taste
▪️ Lemon wedges for garnish

1. In a large pan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
2. Add the Arborio rice and cook, stirring, for 2-3 minutes until lightly toasted.
3. Gradually add the broth, one ladleful at a time, stirring continuously until the liquid is absorbed before adding more. Continue this process until the rice is creamy and tender.
4. Stir in the peas and cook for another 3-4 minutes.
5. Add the flaked smoked salmon, lemon zest, and juice. Mix well.
6. Remove from heat and stir in the grated Parmesan cheese and chopped dill. 7. Season with salt and pepper to taste.
8. Serve the risotto hot, garnished with lemon wedges.
