Ingredients:
Salmon:
▪️ 250g salmon sashimi, cubed
▪️ Juice of 2 limes
▪️ Sea salt, to taste
Wonton Chips:
▪️ 20 wonton wrappers
▪️ Spray oil
Toppings:
▪️ 1/4 cup coriander, chopped
▪️ 2 tablespoons chives, finely chopped
▪️ 1 avocado, cubed
▪️ 2 sheets seaweed, sliced
▪️ 1/2 cup frozen edamame beans, thawed
▪️ Sriracha mayo, to serve
▪️ Kewpie mayo, to serve
Method:
1. Preheat oven to 200°C.
2. Prepare Salmon Ceviche: Mix salmon, lime juice, and sea salt in a bowl. Marinate in the fridge.
