Salmon Ceviche Nachos

These Salmon Ceviche Nachos are a fresh and delicious twist on traditional nachos. Ingredients:

Salmon:
▪️ 250g salmon sashimi, cubed
▪️ Juice of 2 limes
▪️ Sea salt, to taste

Wonton Chips:
▪️ 20 wonton wrappers
▪️ Spray oil

Toppings:
▪️ 1/4 cup coriander, chopped
▪️ 2 tablespoons chives, finely chopped
▪️ 1 avocado, cubed
▪️ 2 sheets seaweed, sliced
▪️ 1/2 cup frozen edamame beans, thawed
▪️ Sriracha mayo, to serve
▪️ Kewpie mayo, to serve

Method:
1. Preheat oven to 200°C.
2. Prepare Salmon Ceviche: Mix salmon, lime juice, and sea salt in a bowl. Marinate in the fridge.
3. Make Wonton Chips: Slice wonton wrappers into triangles. Arrange on a baking paper-lined tray and lightly spray with oil. Bake for 6-7 minutes until lightly golden.
4. Assemble Nachos: Place wonton chips on a plate, top with salmon, coriander, chives, avocado, seaweed, edamame, and drizzle with sriracha and Kewpie mayo.
