Lightning fast and soooo delicious. You can use any veggies you like in this. If they take longer to cook, just throw them in earlier.
You can also use chicken or pork mince for this one.
My girls love this recipe, minus the chilli, so we have this on a regular basis.
Serves 4
Ingredients:
1 tablespoon extra virgin olive oil
500g beef mince
2 cloves garlic, finely chopped
3cm ginger, finely chopped
1/2 red chilli, finely chopped (optional)
1 bunch broccolini, washed and roughly chopped
1 red capsicum, cut into thin strips
1/2 cup snow peas, washed and trimmed
Sauce:
2 tablespoons oyster sauce
2 tablespoons soy sauce or tamari
1 teaspoon honey
1 tablespoon water
1 teaspoon corn flour
270g Fresh egg noodles to serve (or any noodles you like).
Fried shallots to serve (optional)
Method:
1. For the noodles – Bring a large pot of water to the boil. Cook noodles according to packet instructions. Drain and set aside.
2. Place a large frypan onto medium heat. Add extra virgin olive oil and then the garlic, ginger and red chilli. Cook, stirring for 3 minutes. Add the beef mince and turn the heat up to high. Break it up with a wooden spoon for 3-4 mins. Add 1/4 of the sauce here, just so there is a bit of liquid in the pan. Stir through. Add the broccolini and capsicum and stir through for approx. 3 minutes until they become really vibrant. Add the snow peas and the remaining sauce to the pan. Stir through on high heat for approx. 2 minutes. Add the noodles and toss through. Turn off the heat.
