Pepperoni, Basil & Mozzarella Chicken


So this didn't turn out as pretty looking as I'd hoped lol but it still tasted gorge 😍

This type of meal is always so quick & easy to make too much is a bonus 👌

Serves 1...

⭐️ Medium chicken breast (mine today was about 200g raw weight)
⭐️ Paprika
⭐️ 4/5 slices of pepperoni
⭐️ Fresh basil
⭐️ 50g light mozzarella

- Cut 4-5 slits into your chicken breast depending on the size of it. You want to go quite deep but not all the way to the bottom
- Cover your chicken breast in paprika and rub it in until covered
- Pop the sliced up mozzarella & folded pepperoni into the cuts on your chicken then find a basil leaf that matches in size & pop that in too
- Cook in the oven or airfryer on 180-200c for 25-30 mins or until the chicken is cooked through

To make the mini potatoes I simply put 300g of miniature potatoes into the airfryer with a q teaspoon & a half of olive oil and coated with some chip seasoning.
