Mini Quiches π§π₯
Mini Quiches π§π₯ These are so easy & tastes like theyβre from a bakery π I did cheese & bacon flavour because yum, but you can use any mix ins. High protein & perfect for an on the go breaky.
Ingredients:
3 eggs
1/2 cup light ricotta
1/2 cup greek yoghurt
1/2 cup bacon, diced 75g
1 tsp salt
1/2 tsp pepper
1/4 cup grated cheese 30g
2 wraps, quartered
1. Heat oven to 180Β°C and grease or line a muffin tin.
2. Cut wraps into quarters and press into the muffin tin to create a shell for the filling (I used 1.5 @mountainbreadau wraps).
3. Whisk eggs in a bowl, then mix in the ricotta, yoghurt, bacon, salt & pepper.
4. Pour filling into the shells, sprinkle with cheese and bake for 15-20 minutes until egg mixture is cooked through.
5. Garnish with chives, serve hot or cold.

I like making them mini as a savoury snack but you could also make it into one large quiche. Leave out the bacon & add in capsicum, spinach, tomato, mushroom etc for vego.
