Ingredients:
▪️ 100g butter
▪️ 1 leek, finely sliced
▪️ 1 medium onion, finely chopped
▪️ 1 tablespoon flour
▪️ 1 cup fish stock (use liquid from canned smoked fish if available)
▪️ 2 cups milk
▪️ 1 cup sweet corn
▪️ 1 potato, diced into small pieces
▪️ 1 can smoked fish fillets or 2 cups flaked smoked fish
▪️ 2 cups mixed seafood (approx.)
▪️ 1/2 cup cream
▪️ 1/2 cup chopped parsley
▪️ Salt and freshly ground black pepper to taste

Method:
1. Melt the butter in a large saucepan over medium heat.
2. Add the leek and onion, sauté for 3-4 minutes.
3. Stir in the flour and cook for 1 minute.
4. Gradually add the fish stock and milk, stirring constantly to avoid lumps.
5. Add the sweet corn, potato, smoked fish, and mixed seafood.
6. Simmer until the potato is tender and the chowder is thick and creamy.
7. Stir in the cream and chopped parsley. Season with salt and freshly ground black pepper to taste.
8. Optionally, add lemon zest and juice for extra flavor.
