Ingredients

▪️ 4 cups chicken stock (1 liter)

▪️ 2-3 cups rotisserie chicken, shredded
▪️ 80g vermicelli rice noodles (optional)
▪️ Salt and white pepper, to taste
▪️ 1/4 cup spring onion, finely sliced
▪️ 1-2 teaspoons sesame oil
Method
1. Place flour and corn kernels into a blender with 1/3 of the liquid from the cans. Blitz for 30 seconds until combined but not pureed.
2. Pour corn mixture into a saucepan along with chicken stock, soy sauce, and ginger. Mix the cornflour with a splash of water until it forms a thin paste, then add to the saucepan.
3. Bring to a boil, then reduce heat and simmer for 5 minutes until thickened.
4. Cook rice noodles according to packet instructions, drain, and set aside.
5. Remove the saucepan from heat. Slowly pour in the beaten eggs while stirring.
6. Add shredded chicken and cooked noodles to the soup, then season with salt and white pepper.
