Fakeaway Chinese chicken & corn soup 🍜 This is one of my all time fav soups!! It’s easy, cheap & so comforting πŸ’›

Ingredients: Β 
2 x 420g cans corn*
2 tbs plain flour
4 cups chicken stock (1 litre)
1 tbs soy sauce
2 tsp ginger, grated
1 tbs corn flour Β 
2 eggs, beaten
2-3 cups rotisserie chicken, shredded
80g vermicelli rice noodles, optional
Salt and white pepper, to taste
1/4 cup spring onion, finely sliced
1-2 tsp sesame oil

Method:
1. Place flour and corn kernels into a blender with 1/3 of the liquid from the cans. Blitz for 30 secs (dont turn into a puree).*
2. Pour corn mixture into a sauce pan along with the chicken stock, soy sauce and ginger. Mix the corn flour with a splash of water until it forms a thin paste, add to the saucepan. Β 
3. Bring to the boil, then reduce the heat and simmer for 5 mins or until thickened.
4. Cook the rice noodles per packet instructions. Drain and set aside.
5. Take the saucepan off heat. Slowly pour in the beaten eggs while stirring.
6. Add the chicken, cooked noodles and season with salt and white pepper. Optional to add a pinch of sweetener.
7. Divide between 3-4 bowls, serve with a drizzle with sesame oil and spring onions.
