Chelsea Fried Chicken

Chelsea Fried Chicken is a flavorful and crispy delight made with boneless chicken thighs marinated in a blend of milk, onion, garlic, and lemon juice, then coated in a seasoned flour mixture and fried to perfection. Perfect for any meal, served hot with your favorite dipping sauce.

Ingredients
For the Marinade:

For the Flour Mix:

▪️ 1 tbsp ground white pepper
▪️ 2 tsp ground ginger
▪️ 2 tsp ground nutmeg
▪️ 1 tsp ground allspice

For Frying:
▪️ 2-3 cups rice bran or grapeseed oil

Method
1. Marinate the Chicken: Add the chicken, milk, onion, garlic, and lemon juice to a large non-metallic bowl. Cover and refrigerate overnight.

2. Prepare the Flour Mix: In a large mixing bowl, combine flour, milk powder (if using), salt, black pepper, white pepper, ginger, nutmeg, and allspice. Stir with a fork or whisk to combine.

3. Coat the Chicken: Take a piece of chicken from the milk mixture (it should still be dripping with milk) and dredge it in the seasoned flour to coat. Squash it around to get a nice rough texture. Transfer to a plate and repeat with the remaining chicken.

4. Preheat the Oven: Preheat the oven to 60°C (fan bake) if you want to keep the cooked pieces warm while you fry the rest. Line an oven tray with paper towels.

5. Heat the Oil: Heat oil in a large saucepan over medium-high heat until it reaches 160°C, or test the temperature by dropping a cube of bread into the oil—it should turn golden brown in 25-30 seconds.

6. Fry the Chicken: Add chicken pieces a few at a time to the hot oil, ensuring not to crowd the pan. Cook for about 5 minutes or until dark golden brown and cooked through. Drain excess oil and place on the prepared oven tray. Transfer to the oven to keep warm.

7. Serve: Serve hot with aioli, mayonnaise, sauce, or just by itself.
