Bacon & Egg McMuffins 🍳🥓
These homemade breakfast sandwiches are so yummy & perfect for meal prep 😍
Ingredients:
6 eggs
100g Greek yoghurt/ cottage cheese/ ricotta
300g short cut bacon
6 English muffins
6 slices cheese
Salt & pepper
Method:
1. Place the bacon on a lined baking tray and place in the oven at 180 Celsius for 10-15 minutes, flipping halfway (or until cooked to your liking).
2. Whisk/beat the eggs, yoghurt, salt and pepper together in a bowl. Pour mixture into a lined/greased dish and bake for 10 mins until cooked through. Cut into 6 serves.
3. Slice the English muffins in half and place them in the oven for 2-3 minutes until lightly toasted.
4. To assemble, place a serving of egg on half the muffin, top with 2 pieces of bacon, a slice of cheese and the other half of the muffin.
5. Individually wrap and store in the fridge/freezer. Reheat in the microwave or oven/air-fryer.
