Simple-ish but nice pasta sauce

It's my mum's 60th on Sunday and she's coming over for dinner and cake.She doesn't want a big deal but I can't not do anything for her.I need ideas on what to cook.I'm thinking pasta in some sort of a white sauce maybe!What's a nice one to make!I'm ok in the kitchen, well enough to have kept hubby, Mr 4.8 and 1.7 alive so far :)
Also suggestion for a delicious cake recipe.I know there's heaps out there, but I'd like one that has received heaps of good comments.I think I'm a better baker than cook, if that's possible.tia:)

I make a cheats carbonara (which is supposed to have egg yolk in it I think). I just saute onion and garlic in butter, and make a white sauce around it using cream, add some ham etc

Mushroom, asparagus and smoked chicken Fetticine with a wine and cream sauce!or what ever veges you prefer. A single smoked chicken breast is about $9, but will flavour a large lot of pasta.

Quick and easy to do.

Cake recipe great for B/cakes with heaps of great comments, Its a cake not a sponge.
Lemon Madeira Cake.
As a cake decorator this is the recipe I always use. It comes out lovely and moist and keeps that way for days. Makes 2 medium cakes or 1 large cake. Gave this recipe on here a few weeks ago and baker was delighted how well it turned out.
1 cup milk
125gm butter. Bring these to the boil
In a mixer, beat 4 eggs and gradually adds 2 cups sugar, 1 pkt lemon jelly crystals and 1 tsp vanilla essence. Beat until thick, then add 2 and a 1/4 cups of plain flour, 1/4 tsp salt and 2 tsp baking powder. Mix then quickly stir in the boiled milk and butter. Turn the mixture into two 7 or 8 inch lined tins and bake 180c for 20 minutes. If using a novelty shaped pan bake the whole mixture for 40 minutes at 180c or until skewer comes out clean.

A cabonara type pasta is good. I don't use eggs because I can't eat them. I lightly fry a few rashers of bacon with some chicken garlic and onion. I add a little white wine and let it simmer down. Then add a type of philly cream cheese (the low fat one) and milk and cheese to taste.

I'm a baker and I don't like that recipe that fifie suggests.I find it has a very artificial taste and I don't like the texture.Its probably alright for a child's birthday cake if you want a plain cake to decorate.I suggest looking through the following link:There's some lovely recipes here and a bit more special.Just hit the 'next' button above each picture.

This is insanely good! I normally use pene pasta and serve with garlic bread. Make sure to buy chorizo from the deli ( just one or two sausages), don't use the cheaper version in the sausage dept.

Traditional carbonara (if you can eat eggs) is the easiest and quickest pasta dish I know - it's just spaghetti or tagliatelle with eggs, bacon and cheese.I have listed my recipe on here often and people who have tried it seem to have enjoyed it - it's definitely a favourite in our house:

Cook 300g of pasta - I use spaghetti or tagliatelle. While that's cooking fry 200g of bacon, ham or a combination of both in a little olive oil. In a jug beat together 4 eggs, 75g of grated tasty cheese and 25g of grated parmesan with a generous amount of fresh ground black pepper. When the pasta's cooked drain thoroughly, add the fried bacon/ham and toss so that it is evenly distributed through the pasta. Return the pasta mix to the pot and add the egg mixture. Heat very gently until the egg is just cooked but not scrambled - you need to stir constantly at this stage to prevent the egg from scrambling.

That's my recipe anyway - serves 4 - simple, quick and cheap. We usually have a green salad and/or garlic bread with it.You can spice it up a bit by using a combination of bacon and chorizo or pepperoni.

As far as cake is concerned, you can't beat a good chocolate cake - I have two current favourites - the one from the Anchor butter wrapper
