When I use my carrot cake recipe (any cake recipe) in muffin tins, I usually add an extra 1/2C of flour and this usually makes them rise nicely or else they just seem to rise quite flat and sometimes overflow.

Oh The Famous Motueka Carrot Cake recipe!!! I think I posted this here a few years ago, I have seen it here a few times, glad its so Famous! Im born & Breed in Motueka -) I worked at the local cafe where this came from too =)

Hairchopper you are a legend, I have made this cake so many time.always very successful.I am now trying to earn brownie points at my new job and taking one in tomorrow. I will say it is a famous recipe from Motueka.as I am currently in Aus.
