have a lovely recipe for a gingerbread loaf/or cake and was wondeing if it could be used for muffins-would hate to try and waste all the ingredients-anyone cooked this sort of thing as muffins using exact cake recipe?

try these and add ginger and chopped crystallized ginger to them:)
Basic Muffin Mix Bowl 1 4 tsp BP 2 C flour 3/4 C Sugar Bowl 2 1/2 C Oil 1 C Milk 1 egg Add bowl 1 to bowl 2. Just mix. 200 for approx 15 mins Add cocoa, friut etc as you wish:)
and
Fibre Muffins BOWL 1 1/2 C Sugar 1 Tbspn BP 1 1/4 C Flour Mix. BOWL 2 2 C All Bran 1 1/4 Skim Milk/Milk Stand 5 mins add to bowl 2 1/2 C Apple Sauce 1 Egg Mix. Add bowl 1 to bowl 2 and just mix. Spoon into muffin trays. Bake 20 mins at 200 You can add spices, dried fruits etc or even chopped apple, pears to this.

I am yet to find a cake recipe that doesn't work well as cupcakes or muffins. Just cut the cooking time way down - I generally find cupcakes take 10-15 minutes to cook, depending on the cake (and your oven) - and away you go.

I used to cook muffins at 150 degrees in my old oven. When I got a new one, this temp was far too low. So now cook them on fan forced 190 deg!! If you do a lot of baking, you'll know your own oven.
