Lemon Curd Recipie.....

Anyone have a really good one?Never made it before and have a lemon overload.......thanks heaps =)

This is the one I use, taken from Super food ideas magazine

Microwave Lemon curd
Makes 2 &1/2 Cups
4 Eggs, at room temp
1 egg yolk, at room temp
3/4C caster sugar
3/4C lemon juice
125g butter, chopped
1. Whish eggs, extra yolk and sugar together in an 8C microwave-safe until well combined.
2. While whisking, gradually add 3/4C lemon juice. Add butter. Microwave uncovered, on MED (50%) for 7-10 mins, whisking every min with a balloon whisk, or until curd just comes to the boil.
3. Spoon into sterilised jars and store in the fridge for up to 3mths
