Carrot cake, recipe please

I am wanting a relatively easy recipe for carrot cake that doesnt have wholemeal flour in it.

Any help is much appreciated.

is it actually worthbaking at home now as ingredients,power,yr time are expensive vs buying it allready done for say $10....what would it cost to make yr self?

I have costed out many recipes due to living on a benefit, and I still find it is cheaper to bake. I bake with marg instead of butter, buy Pam's, or home brand flour around $2.50 bag (unless it's on special got it for $1.70 at Pak'n'Save.) Will attach my carrot cake recipe, I have at times used other flour in this.

Carrot cake

Place in a bowl:
1/2 cup white flour
1/2 cup wholemeal flour* this could be replaced with white flour is desired.
3/4 cup raw sugar
1tsp baking powder
1 tsp cinnamon
1 tsp baking soda

To this mix add 2 beaten eggs.

Then add 1/2 cup cooking oil
1 1/2 cups grated carrot
bake in a well greased ring tin or round &-8inch t at 180deg for 30 mins.

icing:
Beat together
50g cream cheese
25g butter
1cup icing sugar
1/2 tsp vanilla essence

This makes a very soft moist cake. If you require a very deep cake the recipe could be doubled. This recipe is one I have personally used. Good luck and enjoy.

Carrot + Nut Loaf.
1cup sugar,11/2 cups flour,1tsp B.Soda,1/2 tsp salt,2 beaten eggs,2/3 cup cooking oil,1/4 cup finely chopped nuts,11/2 cups grated carrot,1tsp vanilla essence,11/2tsp ground cinnamon.
Mix sugar and oil,add eggs,then carrots and nuts.Add sifted dry ingrediants.Bake in greased loaf tin 1 hour at 370F.
To make a nice moist cake add a cup of coconut,1 cup crushed pineapple to the above ingrediants.Cook at same temp in square cake tin.
Cream Cheese Icing
250g cream cheese,2 cups i.sugar,50g melted butter,1tsp vanilla,mix well tog,spread onto cooled cake.

Some of us don't care whether its more expensive or not. I know everything I bake is much nicer than bought and I don't care how much it cost.I enjoy baking and get a great deal of satisfaction out of baking a perfect cake.As for an easy Recipe for the original poster....try this one:
Carrot Cake
1c oil (canola is best)
2c plain flour
2 tsps baking soda
3 eggs
1c chopped pecans or walnuts
1c raisins
2c caster sugar
2 tsps ground cinnamon
2 tsps vanilla extract
1 tsp salt
2c grated carrot
1c crushed pineapple well drained
Beat eggs together, sift together over dry ingredients, then add everything else. Mix together until well blended. Pour into a greased and lined cake tin.
Bake @ 180C for about 1 1/2 hours until cooked.

Thanks for the recipes,much appreciated.

I love home baking, I dont care about the cost. I want my kids to see that I can bake and its good for them to have input.
They choose one thing each and I bake it, so at least they will eat it.

I made this cake today, added 3/4 cupish finely chopped dates and it was AMAZING!!!!
I even made lots of mistakes, I realised after I had put it into the muffin pan (I made it into cupcakes as I couldn't find my smaller cake tin) that I had forgotten the baking powder and baking soda so put it back in a bowl and added them, then back in the oven it went.

HIGHLY RECOMMENDED!!!!!

This is a recipes thread so generally speaking people have already decided they want to make it themselves!

It's also good to know what's in your food and making it yourself is the best way to know.
