A.B.C.... sauce in the making

Sounds good, A B C sauce
My Husbands cries are ringing in my ears" don't make this sauce so hot. lol.
Too late
3 kg ripe tomatoes
1 & 1/2 kg over ripe gala apples [added just to use them up]
1 & 1/2 liters of malt vinegar[my brew]
750 mils of cider vinegar[my brew]
1/2 kg of onions
3 Tbsp crushed garlic [out of a jar]
3 Tbsp plain salt
1Habanero chili
1 tsp ground cloves
1 tsp ground black pepper
1 tsp ground ginger
1 tsp ground mace
1/2 kg of brown sugar
1/2 jar of jam needed to be used it's as old as I am...

It is hot but not over the top, may need more sugar, but I will wait before adding more until it reduces down.
I am simmering all that right now, looking at simmering it for two hours.

Smells so nice. It gives me such a buzz to use my own vinegars.

I did not add anything to this sauce in the end. More like a ketchup, but well worth the effort to use the apples. I have made better. The apples came through a tad too much. A good sauce to add flavour to soups, gravy, and casseroles over winter.
