or if time is precious, just buy an edmonds packet mix. i have been buying the buttercake one, and it makes lovely light ones.

I have to agree with this suggestion. I buy the Edmonds Vanilla Cupcake one & it is honestly very nice. I made them at Christmas & used the icing mix that comes with the mixture & put Christmas decorations on top. my daughter makes the best cupcakes in the world - she puts a tray of water on the bottom rack and that makes the cupcakes lovely and moist.
