mince... yea, the corn chips etc is great. my kids LOVE it that way. if i have mince defrosting they ask what i'm making, if i say stew they all groan.

freezing mix? when you say "it makes alot so you can freeze the mix" )on a biscuit recipe) does this mean freezing the raw dough? Surely you don't freeze the extra biscuits? Excuse the question if it sounds silly but i'm not a huge baker. but some of these recipes get me interested and i even try one occasionally! !

just lookin. . I make biccies in bulk and freeze some in icecream containers for later, this works well! :o)

Caramello bars (fundraising choc season is coming) 125g melted butter, 3/4c brown sugar, 2 beaten eggs, 1t vanilla. 1c flour, 1t baking powder, pinch salt, 3/4c chopped dates (or sultanas). 150gm Caramello choc bar, broken into squares. Mix butter & sugar, add eggs & vailla & stir well. Mix dry ingredients together & stir into wet ingredients. Spread half the mixture into a small slice pan lined with baking paper, arrange the 24 choc pieces into rows on the batter, & spread over the rest of the batter. Bake at 175C for 20-30min, cut when cold into 24 pieces. (NB if using a square pan, try to remember the orientation of the choc pieces! )

Bump... bumpity bumpity bump... I just made the fudge brownins, the peanut butter cookies, and the chocolate milk fruit cake is in the oven as I type... this thread is sooo helpful... roll on school days :)

try these gingernuts... just like the bought ones! 100g butter, 1 Tbsp golden syrup, 1 c sugar, 1 lge egg, 1 3/4c flour, 2 tsp ginger, 1 tsp baking soda.
Melt butter in pot, stir in golden syrup, Take off heat, beat in egg and sugar with wooden spoon. Add dry ingredients, stir to mix. Place in small tsp lots on tray lined with baking paper. Leave room to spread. Bake 180 10 mins or til lightly browned.
*if you don't use enough flour the biscuits will spread so measure.
I sprinlle over small bit of sugar before baking. These gingernuts taste and look just like the ones you buy right down to the cracks in the tops.

kiwi crunch this can all be made in a lge pot.
Melt butter. Add 1c sugar, 1 egg, 1 1/2tbsp golden syrup, vanilla. Mix well then add 1c flour, 1c coconut, 1c mixed fruit, 1tsp BP. Add 6 crushed weetbix. Mix. press into lamington size tin. 180 20 mins. As soon as it's out of oven you can drizzle melted choc over it. Yum!
I have a few recipies that make 2 loaves at a time if anyone wants them (fruit and coconut)and a choc cake that is baked in a roasting dish (nice for birthdays)and a nice choc slice(no eggs) also baked in roasting dish. I'm all for big bakes :)

book to recommend for lunches Find this book... School lunches ans after school snacks by alison and simon holst, Hyndman publishing. This is a wonderful resource to have. Greta recipies, tips on those never ending lunches. Well worth buying.
